Pasta Salad with Chicken and Cured Olives
Ingredients:
6 oz of any Chicken meat, cooked, cubed, shredded or still on the bone!
2 Cups of Pasta, cooked (penne, fusili, elbows work best)
1 Big Handful of Greens (arugula, spinach, kale, baby chard, mizuna) chopped, if necessary
1 Cup Raw Cured Black Olives, pitted and halved
½ Cup Tomatoes, chopped (roma or grape work well)
¼ Cup Parsley, chopped
¼ Cup Mint, chopped
1 Clove Garlic, chopped
2 T Olive Oil, Hemp or Flax seed oil
¼ Cup of sesame seeds
½ T Lemon or Lime juice
½ T Apple cider vinegar
Pinch of salt
Pinch of crushed Red Pepper
I really love this recipe because it can be made from leftovers. I always roast a whole chicken once a week to have for things like this and I always cook extra pasta to have on hand for quick use. The rest I always have around the house as well which makes this a super-easy and super-quick meal! Even if you don’t have pasta cooked, in the time it takes to make some you can have the rest ready and waiting to bring it all together. This is also a great pre-training meal as it has the carbs and protein as well as natural electrolytes and minerals from the olives, essential fatty acids from the oil, vitamin c from the lemon/lime, anti-oxidants and pro-biotics from the apple cider vinegar and phytonutrients from the greens! Does it get any more complete!?!?!?
